When myself and STBX disclosed our income/outgoings,during mediation, STBX provided hand written details of his income from self employed jobs he had carried out.
The mediator took copies,for our file i presume.
Can i request copies of these details, from the mediator or do i have to ask my STBX for copies.

That would be decided by the mediator, though i doubt they would agree, but its a question for the mediator, there is no rule as such for your question.

You're entitled to have a copy of those so I'm unsure why the mediator didn't give you those. I would ask to see the bank statements so you can see if the amounts add up.

My mediator told me that I was able to have copies of everything that the other side disclosed to them, paperwork, emails etc.

The other side could do the same.

Ask away.

Also, self-employed jobs should be taxed etc. I would not rely on hand written notes. Ask for proper paperwork , even if a tax return.
